Sailor Seeks Horse Pinot Noir Dijon Clone is a Huon Valley Pinot Noir made solely from Dijon clone vines.
Sailor Seeks Horse is the small Huon Valley estate of Paul and Gilli Lipscombe, south of Hobart in one of the coolest grape-growing corners of Australia. The couple planted and farm their own vineyard organically, working by hand on a sloping site above the valley, and make the wines in small batches with a minimal-intervention approach. The long, cool ripening season of southern Tasmania keeps acidity high and alcohol moderate, which suits both Chardonnay and Pinot Noir. This cuvée isolates the estate's Dijon clone plantings, the Burgundian selections prized for small berries and fine tannin; the wine is fermented in small lots, matured in French oak and sealed under screwcap.
Fine-boned and fragrant, it suits duck, quail, salmon and mushroom dishes; serve at around 14 to 16 degrees.
