Sailor Seeks Horse Pinot Noir Estate is the Huon Valley estate's own-vineyard Pinot Noir from southern Tasmania.
Sailor Seeks Horse is the small Huon Valley estate of Paul and Gilli Lipscombe, south of Hobart in one of the coolest grape-growing corners of Australia. The couple planted and farm their own vineyard organically, working by hand on a sloping site above the valley, and make the wines in small batches with a minimal-intervention approach. The long, cool ripening season of southern Tasmania keeps acidity high and alcohol moderate, which suits both Chardonnay and Pinot Noir. The estate Pinot Noir blends the clones grown across the home vineyard, fermented in small open vats, matured in French oak and sealed under screwcap.
Bright and fine, it suits roast chicken, duck, salmon and mushroom dishes; serve at around 14 to 16 degrees.
