Saint Max Cotes de Provence Rose is a dry, pale rose from the largest appellation of Provence, sealed under screwcap.
Cotes de Provence covers the bulk of Provence's vineyard, running from the coast near Toulon inland across limestone and schist to the hills behind, and the great majority of what it makes is rose. The style is set by the blend and by the handling: Grenache for weight and red fruit, Cinsault for delicacy and pale colour, Syrah for structure, with the grapes picked early and pressed straight away or given only brief skin contact before a cool fermentation in stainless steel. The result is dry rather than fruity-sweet, and the stelvin closure keeps it fresh and aromatic in bottle.
Crisp and dry, it is an aperitif rose that also handles salads, grilled fish, seafood and Mediterranean vegetables; serve well chilled at 8 to 10 degrees.
