Description
Saint Max Côtes de Provence Rosé is a dry pale rosé from the appellation that accounts for the great majority of all Provence rosé.
Côtes de Provence stretches from the coast near Toulon inland across the Var and east towards Saint-Raphaël, taking in limestone, schist and sandstone soils and a climate of long hot summers moderated by the mistral and by sea breezes. Well over four fifths of what it makes is rosé, and the house style is pale, dry and built on Grenache and Cinsault, with Syrah, Mourvèdre, Tibouren and Carignan permitted alongside them. Fruit is picked early and cool to hold acidity, pressed directly or given only the briefest maceration for colour, then fermented at low temperature in stainless steel and bottled young to be drunk within the year.
Dry and crisp, it suits grilled fish, salade niçoise and charcuterie through the summer, and the three litre format is made for a long table; serve well chilled at 8 to 10 degrees.
