Salo Yarra Valley Chardonnay 2025

Salo Yarra Valley Chardonnay is a full-framed Chardonnay from the Full Moon Vineyard at Gladysdale in the upper Yarra Valley.

Gladysdale sits high and cool in the upper reaches of the Yarra, and the Full Moon Vineyard there has supplied the fruit since the project started in 2008. Dave MacKintosh of Arfion and Steve Flamsteed, long of Giant Steps, make it together, and the brief has never changed: Chardonnay from the Yarra with weight, power and real structure, the site and the season still doing the talking. That has never been the regional default, which is much of the appeal. This is the final release from Full Moon before the label finds a new home in 2026, and it goes out layered and expressive.

Generous but tightly wound, with white peach, grapefruit pith, roasted nuts and a long, saline finish. Serve at 12 degrees, and let it warm a little in the glass. Roast chicken, scallops, or a mushroom and thyme tart.
