Salomon Undhof Alma Amphora 2021

Salomon Undhof Alma Amphora is a dry Austrian Riesling from Kremstal, fermented and matured in clay amphora rather than steel or oak.

The Salomon family has farmed at the Undhof in Krems-Stein since 1792, working terraced sites on the primary rock, gneiss and loess soils that flank the Danube in Kremstal. Riesling here sits on the steep, stony terraces where thin soils and warm days meet cold air drawn down from the Waldviertel at night, a swing that holds acidity while the fruit ripens slowly. This cuvee departs from the estate's usual stainless steel and large cask regime: the wine is fermented and raised in clay amphora with extended contact with its own solids and no new oak influence, which builds texture and a faintly saline grip rather than overt fruit. It is bottled under a stelvin screwcap.

Dry, textural and savoury, it suits river fish, roast chicken and lightly spiced Asian dishes; serve at around 10 degrees.
