Description
Salomon Undhof Kögl Riesling is a dry Kremstal Riesling from the Kögl, an Erste Lage terraced site above Stein.
The Undhof has been in Salomon hands at Krems-Stein since 1792, and Kögl is one of its benchmark holdings, a steep terraced slope of weathered primary rock and gneiss under only a thin covering of soil, classified Erste Lage by the Osterreichische Traditionsweinguter. Vines struggle on the stone, yields fall away naturally, and the cool night air funnelled down the Danube valley preserves acidity through a long autumn. Fruit is whole-bunch pressed and given a slow, cool fermentation, then left on its fine lees in stainless steel and large neutral casks to build breadth without picking up oak flavour. The wine is dry and closed with a screwcap to keep it precise.
Taut and mineral with a citrus core, it works with trout, schnitzel, veal and fresh goat's cheese; serve at around 10 degrees.
