Sella & Mosca Torbato Spumante is a refined and characterful sparkling wine from Alghero, Sardegna, crafted from 100% Torbato - a rare native grape rediscovered and championed by one of the island’s most historic estates. Grown in calcareous soils formed from ancient marine sediment, Torbato brings striking acidity, saline freshness and Mediterranean soul to this elegant spumante.
Straw-coloured with lively, fine bubbles, it opens with aromas of ripe apple, navel orange and white peach, layered with acacia blossom, wild spring flowers and a delicate hint of brioche. The palate is fresh and vibrant, showing green apple, pink grapefruit and lemon drop, with a subtle touch of residual sugar that beautifully balances the grape’s natural acidity. Fuller and more textural than Prosecco, this is dry, savoury and more complex than most tank-method sparkling wines, finishing long, saline and refreshingly precise.
Made with immediate gentle pressing, stainless-steel fermentation and a 20-day secondary fermentation on lees, it rests in tank to preserve purity and aromatic lift. No malolactic fermentation ensures brightness and tension. Perfect as an aperitivo or alongside fresh Australian oysters or crudo di pesce.

Carpaccio di Pesce (Sardinian-Style Fish Carpaccio with Lemon & Olive Oil)
Ingredients:
- 300g very fresh white fish (snapper, kingfish or sea bream), thinly sliced
- 3 tbsp extra virgin olive oil
- 1 lemon (juice and zest)
- 1 small handful fresh parsley, finely chopped
- Sea salt flakes
- Cracked black pepper
Instructions:
- Arrange the thin slices of fish on a chilled serving plate in a single layer.
- Drizzle lightly with olive oil and fresh lemon juice.
- Sprinkle over lemon zest, parsley and a pinch of sea salt.
- Finish with cracked black pepper and serve immediately.
