Serge Dagueneau Pouilly Fumé Clos des Chaudoux is a single-vineyard Sauvignon Blanc given a period of skin contact before pressing.
Pouilly-Fumé sits on the right bank of the Loire opposite Sancerre, on Kimmeridgian marl, Portlandian limestone and flinty silex, and Sauvignon Blanc is the only grape permitted for its white wine. The Dagueneau family has farmed at Les Berthiers in Saint-Andelain for generations, and the vineyards are worked organically. Clos des Chaudoux is a single parcel of 1.5 hectares, bottled on its own rather than blended into the estate cuvée. The point of difference is the winemaking: the fruit is given a spell of skin contact, an unusual choice in an appellation that normally presses whole bunches straight to tank. That maceration draws phenolics from the skins and gives the finished wine more weight, texture and grip than a conventional Pouilly-Fumé.
Fuller and more textural than the domaine's tank cuvées, it stands up to roast chicken, pork terrine and hard sheep's cheese; serve at around 11 degrees.
