Serge Dagueneau Pouilly Fumé L'Odyssée is a Sauvignon Blanc from a tiny parcel of Kimmeridgian marl, fermented and raised in a concrete egg.
Pouilly-Fumé sits on the right bank of the Loire opposite Sancerre, on Kimmeridgian marl, Portlandian limestone and flinty silex, and Sauvignon Blanc is the only grape permitted for its white wine. The Dagueneau family has farmed at Les Berthiers in Saint-Andelain for generations, and the vineyards are worked organically. L'Odyssée comes from a parcel of just 0.3 hectares on Kimmeridgian marl, the fossil-rich clay-limestone that runs north through Chablis and gives Pouilly-Fumé its firmest, most saline expression. The wine is vinified in a cement egg, whose shape keeps the lees in gentle circulation and whose porous walls allow slow oxygen exchange without adding any oak flavour, building texture while leaving the character of the site intact.
Textured yet precise, it suits oysters, scallops and white fish in beurre blanc; serve at around 11 to 12 degrees.
