Serge Dagueneau Pouilly Fumé Tradition is the domaine's benchmark dry Sauvignon Blanc, raised entirely in tank and offered here in a 375ml half bottle.

Pouilly-Fumé sits on the right bank of the Loire opposite Sancerre, on Kimmeridgian marl, Portlandian limestone and flinty silex, and Sauvignon Blanc is the only grape permitted for its white wine. The Dagueneau family has farmed at Les Berthiers in Saint-Andelain for generations, working parcels spread across those soils. Tradition is the house's principal cuvée, drawn from sites across the estate rather than from a single vineyard, and it is fermented and matured entirely in tank with no oak at any stage. That keeps the emphasis on the freshness of the fruit and on the mineral cut the limestone and flint give. The half bottle is a practical format for pouring by the glass and brings the wine forward a little faster than a full bottle.

Dry, brisk and citrus-driven with the appellation's smoky edge, it is a natural partner for oysters, fresh goat cheese and simply grilled fish; serve at around 10 degrees.
