Description

Shadowfax Macedon Chardonnay comes from the Macedon Ranges, the coolest wine region on mainland Australia.

The Macedon Ranges rise north-west of Melbourne, with vineyards planted between three and seven hundred metres, which makes ripening slow and harvest late; frost and wind are the real risks. Chardonnay here keeps a tight, citrus-driven line. Shadowfax is based at Werribee Park, west of Melbourne, and draws fruit from Macedon and Geelong. The wine is barrel-fermented with lees ageing.

Serve at 12 degrees with roast chicken, fish or a soft cheese. It develops over eight years.
