Description

Shadowfax Macedon Pinot Noir is grown in the high, cold country north-west of Melbourne.

The Macedon Ranges' altitude gives Pinot Noir a long season and the natural acidity that defines the region's style: lighter-framed and more perfumed than the Yarra or Mornington. The wine is fermented with a portion of whole bunches and matured in French oak with restraint on new wood.

Serve at 15 degrees with duck, salmon or a mushroom tart. It develops over eight years.
