Description
Shadowfax Minnow Viognier is a textural white from a Rhône grape grown in Victoria's Pyrenees.
Viognier comes from Condrieu in the northern Rhône, where it makes perfumed, full-bodied whites of apricot and blossom; picked too late it turns heavy, so the balance is a question of timing. The Pyrenees ranges in central Victoria are warm and dry with granitic soils, and suit it well. Shadowfax was established in 2000 at Werribee Park outside Melbourne, with the Minnow label used for the lighter, earlier-drinking wines in the range. The fruit is whole-bunch pressed and fermented in neutral vessels with lees stirring and no new oak.
Serve at 10 degrees with roast pork, spiced chicken, pumpkin or a washed-rind cheese.
