Description

Shaw + Smith M3 Chardonnay Aged Release is the estate's flagship Chardonnay held back and released with bottle age.

M3 is named for Michael Hill Smith, Martin Shaw and the Woodside vineyard they planted in 1994, and it comes from the home block in the Adelaide Hills at around 480 metres. Chardonnay at that elevation ripens slowly and keeps a firm acid line, which is what allows a wine to be cellared for years before release rather than sold on its fruit. An aged release has done that ageing at the winery under stable conditions. The wine is whole-bunch pressed, barrel fermented with native yeast and matured in French oak.

Serve at 12 degrees with roast chicken, crab, veal or a mature cheddar. Drinking well now.
