Shaw + Smith Riesling 2025

Shaw + Smith Riesling is a dry Adelaide Hills white from high-altitude plantings east of the city.

Riesling in the Hills gives a different wine from Clare or Eden Valley: more floral and a touch softer in acidity, thanks to higher rainfall and cloud cover during ripening. The fruit is picked early to hold that acidity in place, whole-bunch pressed, fermented cool in stainless steel and bottled young without oak or malolactic fermentation.

Serve at 8 degrees with seafood, salads or Vietnamese food. It will develop over eight years.
