Shaw + Smith Sauvignon Blanc was the wine that established the winery and remains its most widely known.

When Martin Shaw and Michael Hill Smith MW released their first Sauvignon Blanc in 1990, the Adelaide Hills was barely planted; the wine helped define the region and the Australian style of the variety, which is less pungent than Marlborough's. Fruit comes from cool, elevated sites in the Hills, is pressed gently and fermented cool in stainless steel to keep the fruit clean and direct.

Serve at 9 degrees with oysters, goat's cheese or a salad. Drink within two years of the vintage.
