Shaw + Smith Shiraz Aged Release 2016

Shaw + Smith Shiraz Aged Release is an older vintage held back at the winery and released with bottle age.

Cool-climate Shiraz from the Adelaide Hills has the acidity and tannin structure to age, and releasing a wine at close to a decade old shows what that time does: the peppery edge softens and savoury, earthy notes come forward. The fruit came from the winery's Balhannah plantings and was made in the usual way, with whole bunches in the ferment and maturation in French oak, then cellared at the winery.

Serve at 17 degrees with slow-cooked beef, game or hard cheese. Drinking well now.
