Sidewood Vignerons Cassandra Blanc De Blancs is a vintage Adelaide Hills sparkling made from Chardonnay.

The Sidewood Vignerons wines are the estate's prestige sparkling range, each named for a member of the Inglis family, and Cassandra takes its name from co-owner Cassandra Inglis. Made entirely from Chardonnay grown in the cool Adelaide Hills, it's bottle-fermented and given long ageing on lees, building brioche, grilled nut and toasted biscotti notes around a core of lemon rind and citrus blossom. The 2017 has a round, rich palate balanced by linear acidity, with a creamy mouthfeel and a finish touched with tart marmalade and subtle spice.

Serve well chilled in a tulip glass. It sits nicely alongside oysters, seared scallops or a plate of aged Comté. There's no rush; the toasty complexity will keep building for a few more years.
