Description

Sidewood Vignerons Chloé Cuvée Sparkling is a mature vintage sparkling from Adelaide Hills Chardonnay and Pinot Noir.

Part of Sidewood's premium Vignerons range, which carries the names of the Inglis family, Chloé is a classic blend of 60% Dijon-clone Chardonnay and 40% MV6 Pinot Noir. Both clones suit cool sites, and in the Adelaide Hills they give fine acidity and delicacy. From the 2015 vintage, the wine has had long bottle age to develop, bringing toasty brioche and biscotti notes to green apple, zesty citrus and orange blossom. A slaty, driving minerality gives it length, balanced by an elegant, creamy finish.

Chill well and bring it out for a special occasion. It shines with seafood, especially crab, lobster or sushi, and handles richer dishes such as roast chicken too.
