Sigalas Aa Assyrtiko and Athiri Santorini 2025

Sigalas Aa blends Assyrtiko with Athiri, both native to the Aegean islands.

Athiri is softer and more floral than Assyrtiko, and blending the two tempers the piercing acidity that makes pure Santorini Assyrtiko so austere in youth. The vines are trained into low baskets called kouloura to shelter the fruit from the wind, and the volcanic soil kept phylloxera out, so many are ungrafted and old at the root.

Serve at 11 degrees with grilled fish, seafood or a Greek salad. Drink within five years.
