Sliabh Liag Distillery An Dulaman Irish Maritime Gin is a seaweed-forward gin from the Donegal coast, bottled at 43.2 per cent.

The name comes from an Irish song about two seaweed harvesters, and the coastline below the distillery is exactly the sort of place they would have worked. Over a base of juniper, angelica, cassia, coriander and citrus peel sit five local seaweeds, each prepared on its own: channel wrack for firmness, sugar kelp for sweetness, dulse for savoury salt, pepper dulse for a spicy, umami note, and carrageen moss, vapour-infused, for a soft nuttiness. Pepper dulse hides among rocks at the tide line and can only be gathered on a full moon. The Forsyth still runs cool and the cut is narrow.

Savoury and coastal, with juniper, citrus peel and a genuine saline tang through the finish. Serve it long with a light tonic and a slice of pink grapefruit, or over ice with soda and a caper berry. It also makes a striking martini alongside oysters.
