Sohm & Kracher Chardonnay St Georg is a barrel-fermented Burgenland Chardonnay from the partnership between Aldo Sohm and Gerhard Kracher.
Chardonnay has a long if quiet history in Burgenland, where warmth around the Neusiedlersee and the region's gravel and loam soils give it ripeness and body while the lake moderates the hottest days. The St Georg bottling is handled in the Burgundian manner: whole-bunch pressed, fermented in barrel with roughly half new oak and half seasoned wood, then left on its lees to build a creamy, layered texture. Time in wood and a softening of the malic acidity give spice and a nutty edge, but the fruit is picked early enough to keep the acid line intact. The elevage is carried out in the Kracher cellar at Illmitz, better known for its botrytis wines.
Full and creamy but still fresh, it suits roast chicken, scallops, veal and richer fish dishes; serve at around 12 degrees.
