Spinifex Clairette 2021

Spinifex Clairette is a varietal Clairette from a single high site at Rowland Flat in the Barossa Valley.

Clairette is a Mediterranean grape that holds acidity well even in heat, which is why it earns its keep in white blends across the southern Rhone, and Pete Schell has long used it as a component in his Lola. Standalone bottlings have been rarer; this is only the third. The fruit comes from vines grafted over to the variety about a decade before, high on the eastern side of the valley. Hand-picked, chilled overnight, crushed and left four hours on skins, the settled juice fermented on wild yeast, mostly in stainless steel with a small portion in old French oak.

Dry, gently textured and low-key, with lemon, green melon, fennel and a chalky finish. Serve properly cold, around 10 degrees. Fish tacos, a salad of tomato and burrata, or grilled prawns with garlic and lemon.
