Spinifex Clairette 2024

Spinifex Clairette is a Barossa Valley white made entirely from Clairette grown at Rowland Flat.

This variety turns up all over the southern Rhone's white blends for a simple reason: it keeps its acid when other grapes lose theirs. Pete Schell has worked with it for years, mostly inside the Lola blend, and bottles it alone when the urge takes him, which had not happened since 2021. The vines sit high on the eastern side of the southern Barossa, ripening slowly so flavour and weight build while the acidity stays put. Hand-picking, chilling and crushing were followed by three hours of rest, then a press to tank for fermentation; no malolactic conversion, and ten months on light lees.

Gentle grip from the skin contact, balanced by concentrated pear and citrus flavour and a bright, clean finish. Serve at 10 to 11 degrees. Good with grilled whiting, a chicken and tarragon salad, or a plate of oysters.
