Spinifex Garçon 2020

Spinifex Garcon is a Barossa Grenache drawn from three old dry-grown parcels across the valley.

One sits in the far west at Moppa on 55-year-old vines, one in the north at Ebenezer at 90 years, and one to the east at Bethany at 85. That spread is the point: each corner of the Barossa gives Grenache a different accent. Winemaking runs the traditional route here, with slow natural fermentation, gentle pump-overs and a bit of foot-stomping, and the 2020 averaged around 40 per cent whole bunches. Ageing took place on light lees in seasoned thick-staved 600-litre demi-muids with a further stretch in a 2,500-litre foudre, and the wine was bottled unfined and unfiltered eight months after harvest.

Bright and lifted, with red berries, earthy spice and a floral edge, carried on refreshing acidity and a light nip of tannin. Serve at 15 degrees, or briefly chilled. Roast pork, charcuterie, or a tomato and olive pasta.
