Spring Seed Gypsy Blanc de Blancs NV

Spring Seed Gypsy Blanc de Blancs is a Chardonnay-only sparkling wine from organically farmed McLaren Vale vineyards.

Chardonnay picked early, to keep the natural acidity a good sparkling needs, is the whole story here. It's a non-vintage release, so the style stays consistent from one bottling to the next. Joch Bosworth and Louise Hemsley-Smith, also behind Battle of Bosworth, grow the fruit on certified organic vineyards around Willunga, at the southern end of the Vale.

Crisp, citrusy and clean. Serve well chilled at 6–8°C with oysters, prawns or fried calamari, or open it on its own to start a celebration.
