Description
Stonegarden Cabernet Sauvignon 2017 is a firm, cellar-minded Barossa red now showing the softening that comes with bottle age.
The vineyard sits on higher, cooler country at the eastern edge of the region where it climbs towards Eden Valley, and Cabernet grown at that altitude holds its line of acidity and its dark, tightly wound fruit. Some plantings there are past a hundred years old, and crops off vines of that age come in small and concentrated. We have not confirmed the maturation detail for this release.
Blackcurrant and dried herb come through with cedar from time in bottle, and the tannins have begun to settle. Decanting still helps; serve at 16–18°C alongside a rib roast, braised short rib or a mature cheddar.
