Description
Suertes del Marqués 7 Fuentes is the estate's village red, named for the seven climats of the Valle de la Orotava.
The fruit comes from 35 separate plots on the northern slopes of Mount Teide, from vines between 10 and 100 years old and at altitudes reaching 800 metres. Listán Negro, wildly aromatic and the mainstay of Tenerife, makes up the bulk and is grown mainly in the plaited cordón trenzado; a small portion of Tintilla from the Bocanegra plot is trellised on wires. Each parcel is fermented separately in small stainless steel tanks with indigenous yeast and a short, gentle maceration, then blended and aged in small concrete tanks, about 70%, and mature French demi-muids for the rest. The style has moved over the years towards something prettier and lighter-bodied, closer in weight to Pinot Noir, with crunchy berry fruit and a smoky volcanic edge.
Drink now and over the next four or five years. Serve slightly cool, at 14-15°C, with grilled sardines, roast pork or a tomato salad.
