Description
Swinney Franklands Cabernet Syrah is a rare two-variety blend from Frankland River, made in tiny volume.
Everything here was dry-grown: trellised Syrah from the Powderbark block B2 and Cabernet Sauvignon from Wilson's Pool block 401, with only a subsection of soil in each farmed and selected for the bottling. Shade cloth on the western side protects the skins and cools the bunch zone. Berries were sorted one by one, eight per cent whole bunches went into the Syrah, and both varieties fermented on wild yeast. After 11 days on skins they were pressed to three seasoned French barriques to finish fermenting, then blended after malolactic and filled into a single four-year-old 600-litre demi-muid. Sixteen months in wood all told.
Cabernet supplies the chassis, all mouth-coating tannin and mineral-soaked black fruit, while the Syrah brings suppleness and flesh. Tense, velvety and very long. Serve at 17 degrees, decanted, with roast lamb, aged beef or a mature cheddar.
