Description

Sylvain Cathiard Bourgogne Hautes Côtes de Nuits Aux Chaumes is Pinot Noir from a single vineyard on the plateau above Nuits-Saint-Georges.

Aux Chaumes is a parcel of about 1.35 hectares sitting at 380 to 400 metres on limestone, well above the famous slope and cooler for it. The domaine is based in Vosne-Romanée and run today by Sébastien Cathiard, who took it on from his father Sylvain; its name was built on a small holding of premier and grand crus farmed with unusual care, and the same hand is at work up here. Altitude slows ripening, which tells in warmer years, and the wine comes out lighter in frame and redder in fruit than the village wines below.

Fine-boned and savoury. Roast poultry, veal, mushrooms or a soft washed-rind cheese suit it better than anything heavy. Serve at 14 to 16 degrees after a short decant.
