Description
Sylvain Pataille Bourgogne Aligoté is the only blended Aligoté in the range, drawn from old vines in Marsannay and the Hautes Côtes.
Half the fruit is harvested from old-vine Aligoté Doré in Marsannay itself, including a portion from Champ Forey on limestone and gravel, with the balance coming from Échevronne in the Hautes Côtes de Beaune, above Corton. The average age of the vines across the two sources is more than fifty years, and although this is the entry-level Aligoté in the range, the depth and energy that come from old vines and low yields are immediately apparent. The wine ferments naturally in stainless steel, then matures in old foudre before returning to stainless steel for four months ahead of bottling. That combination keeps the variety's brisk acidity intact while adding a little breadth, and it explains why Pataille's work has done so much to change how Aligoté is regarded.
Drink young and over the next three or four years; serve at 10–12°C with oysters, grilled prawns or a green salad with goat's cheese.
