Sylvain Pataille Bourgogne Aligoté Champ Forey comes from 0.3 hectares of vines planted between 1932 and 1961 in Marsannay-la-Côte.
Pataille is the grower most closely identified with the revival of Aligoté in Burgundy, and Champ Forey is among his oldest holdings of the variety. The vines are Aligoté Doré, the finer, lower-yielding selection of the grape, sitting at 250 metres and facing east on gravelly limestone soils. The lieu-dit gives a wine of real substance for a variety long treated as an afterthought, and the age of the plants is central to that. Champ Forey ferments chiefly in used casks, with just 15 per cent new oak, and then ages for a year before bottling. The result is a taut, saline white with more depth and grip than Aligoté is usually credited with.
Ready on release and good for four or five years; serve at 10–12°C with oysters, grilled sardines or a fresh goat's cheese.
