Description
Sylvain Pataille Bourgogne Les Méchalots comes from a high-density vineyard the grower planted himself in 2010 at the bottom of the Marsannay slope.
Pataille works 0.3 hectares of Chardonnay in the Les Méchalots climat, established using mass-selection material at high planting density. Interplanted among the Chardonnay is a little Pinot Beurot, the Burgundian name for Pinot Gris, which he likes for the complexity it brings to the blend. The deep alluvial soils here carry many small stones and give texture that offsets the natural tension of the site. Fermentation starts in stainless steel and the wine is transferred into seven-year-old barrels halfway through to finish its ageing, a method that preserves freshness while building weight on the mid-palate. This terroir routinely delivers village-level intensity, complexity and length despite carrying only the regional Bourgogne appellation.
Drink over the next three to five years; serve at 10–12°C with roast chicken, grilled fish or a fresh goat's cheese.
