Description
This is Sylvain Pataille's regional red, blended from parcels in Marsannay and the Hautes Côtes covering just over a hectare.
Pataille built his name at Marsannay, at the top of the Côte de Nuits, and his Bourgogne Rouge has become one of the better-known wines at its level, praised by Rajat Parr among others. The blend brings together several sites, including one parcel planted in 1956, so old vines make up a good share of the fruit. Each parcel is fermented separately, with the maceration adjusted to suit, and the final assemblage usually carries around 50% whole bunches. The wine then spends a year in barrel and sees no sulphur until bottling, an approach that asks for careful cellar work but preserves the fruit's lift. It is a red of real personality for the appellation rather than a simple everyday Pinot Noir.
Drink now and over the next six years, with duck, roast pork or a mushroom tart, at 16°C.
