Description

Tenuta Mazzolino Camarà Pavia IGT Chardonnay is a vibrant white from Oltrepò Pavese in Lombardy, one of northern Italy’s most respected cool-climate wine regions. While the area is internationally recognised for Pinot Nero, its limestone and chalk-rich soils also provide ideal conditions for producing elegant, expressive Chardonnay with a strong sense of place.

Produced by Tenuta Mazzolino, a family-owned estate in Corvino San Quirico, Camarà has been crafted from estate-grown Chardonnay for decades and is named after one of the property's vineyards. The winery is known for its meticulous vineyard management and commitment to showcasing the unique terroir of Oltrepò Pavese through site-specific wines.

This is a fresh and contemporary Italian white that highlights the understated quality of Lombardy’s wine regions, ideal as an aperitif or alongside seafood, light pasta dishes and relaxed entertaining.

Camarà is named after one of the estate's historic Chardonnay vineyards and reflects Tenuta Mazzolino's commitment to site-driven winemaking. Carefully managed vineyards, modern cellar practices and the exceptional limestone-rich terroir combine to produce a Chardonnay of freshness, elegance and regional identity.

Recipe

Torta Salata agli Asparagi (Lombardy Asparagus Tart)

Ingredients:

  • 1 sheet all-butter puff pastry
  • 250g asparagus, trimmed
  • 3 eggs
  • 150ml pouring cream
  • 80g Parmigiano Reggiano, grated
  • 1 small shallot, finely diced
  • 1 tbsp extra virgin olive oil
  • Salt and cracked black pepper
  • Fresh thyme leaves

Instructions:

  1. Preheat the oven to 190°C and line a tart tin with the puff pastry.
  2. Heat the olive oil in a frying pan and cook the shallot until softened. Add the asparagus and cook for 3–4 minutes.
  3. Whisk together the eggs, cream, Parmigiano, salt and pepper.
  4. Arrange the asparagus and shallot over the pastry base and pour over the egg mixture.
  5. Sprinkle with fresh thyme and bake for 30–35 minutes until golden and set.
  6. Allow the tart to cool slightly before slicing and serving warm or at room temperature.

A popular springtime dish in Lombardy, this savoury asparagus tart pairs beautifully with Oltrepò Pavese Chardonnay. The wine's fresh citrus fruit, subtle minerality and lively acidity complement the sweet asparagus and creamy Parmigiano, creating an elegant regional pairing.
