Terroir al Límit Priorat Históric Blanc is Dominik Huber's return to the Priorat white as it was made before the region's modern, high-extraction era.
Priorat, in inland Catalonia, is best known for concentrated reds from its licorella slate terraces, but the region has a long tradition of white wine, and Históric is Huber's homage to it. The blend deliberately covers the full range of Priorat's soils and aspects: slate, clay, granite and alluvial ground, shaded aubagues and sunny solanes, from 350 up to 800 metres. All the sites are certified organic. The wine is 75 per cent Grenache Blanc and 25 per cent Macabeo, close to the proportions that would have been used generations ago. Skin contact has been reduced over the years, so the fruit is now mostly pressed as whole clusters; the juice ferments with indigenous yeasts and is raised on lees for six months in a single 5,000-litre concrete tank. There is no destemming, no stainless steel, no pigeage and no new oak.
Drinking well now and good for five or six years. Serve with grilled fish, rabbit or a hard sheep's cheese at 10 to 12°C.
