Terroir al Límit Priorat Históric Blanc 2022

Terroir al Límit Priorat Históric Blanc is a white Priorat made to recall how the region tasted before extraction and new oak took hold.

Priorat is a small, steeply folded appellation in southern Catalonia, best known for its licorella slate. Dominik Huber conceived Históric as an all-encompassing view of the region rather than a single-site wine, so the fruit is drawn from several soil types and aspects: slate, clay, granite and alluvial ground; shaded aubagues and sun-facing solanes; and altitudes ranging from 350 to 800 metres. All the sites are certified organic. The blend is 75% Grenache Blanc and 25% Macabeo, roughly the proportion a grower here would have used generations ago. Skin contact has been steadily reduced over the years, so the grapes are now mostly pressed as whole clusters. The juice ferments with wild yeasts and is raised on lees for six months in a 5,000-litre concrete tank, with no destemming, no stainless steel and no new oak.

Approachable now and worth keeping for three or four years, it goes with grilled prawns, salt cod or roast fennel. Serve at 10–12°C.
