Description
Terroir al Límit Priorat Históric Blanc is a concrete-raised white built on the grape mix Priorat used generations ago.
As with the red, the Históric Blanc is drawn from across Priorat rather than from one site, covering slate, clay, granite and alluvial soils, shaded and sunny aspects, and vineyards between 350 and 800 metres. All the sites are certified organic. The blend is 75 per cent Grenache Blanc and 25 per cent Macabeo. Over the years Dominik Huber has stepped back from the skin contact that once defined the wine, so today the grapes are mostly pressed as whole clusters, the juice ferments spontaneously and the wine is raised on lees for six months in a 5,000-litre concrete tank. There is no destemming, no stainless steel, no pigeage, no extraction and no new oak. What that leaves is a white shaped by texture and stony savouriness rather than by winemaking additions.
Drink over the next few years and serve at 10–12°C in a decent-sized glass; it works with grilled fish, roast vegetables or a seafood paella.
