Terroir al Límit Priorat Históric Negre is Dominik Huber's homage to the way Priorat was made before high-extraction winemaking took hold.

The Históric wines are deliberately assembled across the whole of Priorat rather than from a single site, taking in slate, clay, granite and alluvial soils, shaded aubagues and sunny solanes, and altitudes from 350 to 800 metres. All the sites are certified organic. The blend is 75 per cent Grenache and 25 per cent Carignan, roughly the proportion used in the region a generation ago. A healthy share of the Grenache is grown at La Morera, high in the Montsant ranges on clay and limestone, while the rest of the fruit comes from vines across Priorat rooted in slate and schist, which is where the savoury, mineral edge comes from. The wine ferments as whole clusters with indigenous yeasts, then spends six months in a 5,000-litre concrete tank, so there is no oak influence at all.

Approachable now and worth keeping for several years; serve at 16–18°C, or very lightly chilled, with lamb shoulder, grilled botifarra or a mushroom rice.
