Terroir al Límit Les Tosses is an old-vine Carignan from a black slate ridge at 650 metres near Torroja.
Les Tosses is one of the estate's two Vi d'Altura wines, its grand cru tier, alongside Les Manyes; where Les Manyes reads Priorat through Grenache, Les Tosses does so through Carignan. The two-hectare vineyard sits on a stony ridge of deep black slate to the north-east of Torroja, at an altitude that few ancient vineyards in the region reach. The eighty-year-old bush vines are mainly Carignan with a small proportion of Grenache, face east across the valley and are planted at 6,605 plants per hectare. These vines receive the most detailed attention of any on the estate, and only the best portion of the site goes into this bottling, with the remainder used for the village wine. Dominik Huber ferments one hundred per cent whole bunches with indigenous yeasts, presses halfway through fermentation, and then moves the wine to concrete for eight months. Quantities are tiny.
Worth five years in the cellar and good for fifteen or more; serve with slow-roasted lamb, game or hard mountain cheese at 16°C.
