Terroir al Límit Pedra de Guix is a white Priorat drawn from three villages and three varieties, raised entirely in concrete.
White Priorat is rare, and this is the bottling that made the case for it. Classified within the estate's range as a Vi de Coster, the equivalent of a premier cru, it blends Grenache Blanc from Poboleda on schist, Macabeo from Torroja on alluvial soils, and Pedro Ximénez from the chalk and gypsum of El Lloar. The vines across the three sites are between fifty and eighty years old. The grapes are basket-pressed gently over several hours and the juice ferments with wild yeasts in diamond-shaped concrete vats, where it then matures for eleven months. Most of the fruit is now pressed off its skins before fermentation, which has shifted the style towards purity and tension rather than the more developed character of earlier releases, without losing the salinity and structure the rocky soils give. It is bottled unfiltered, with taut acidity balanced by phenolic grip and real textural weight.
Drink now or cellar for a decade; it suits grilled crayfish, roast chicken or hard sheep's cheese. Serve at 10-12°C, and not too cold.
