Terra de Cuques is Terroir al Limit's village-level white Priorat, unusual in being built on Pedro Ximénez vinified bone dry.
Priorat is better known for old Garnacha and Carinena on licorella slate, but the appellation has a long white-wine history and Terroir al Limit has made it central to its work. The wine is classified as Vi de Terra Viva, the equivalent of a village bottling, and blends around 90% Pedro Ximenez from the clay soils of Le Molar with 10% Muscat of Alexandria grown on north-facing slate at Porrera. The source vineyards sit between 400 and 600 metres and face north-east, so the vines are sheltered from the harshest sun while cold nights hold on to acidity, and the old bush vines add to that coolness. In the cellar the Pedro Ximenez is layered in a wine press and trodden gently for an hour before basket pressing, combining light extraction with maceration; the Muscat is fermented as whole bunches under their own weight and finishes in concrete tank.
Approachable now and worth five years or more in the cellar. Serve at 10-12°C with grilled fish, herb-roasted chicken or a plate of Iberian ham.
