Description
Terroir Sense Fronteres Brisat is a lightly skin-fermented Montsant white, brisat being the Catalan term for wine made on its skins.
The blend is 75 per cent Garnacha Blanca and 25 per cent Macabeo from vines of 15 to 35 years around Capçanes in the south of the appellation, grown at 300 to 350 metres on the sandy clay soils known locally as panal. Picking is earlier than is usual for the area, taken when flavours have arrived but acidity is still vibrant, which sets the frame for the wine. Half the crop is direct-pressed and the other half macerates in its juice for five to seven days. Anyone who knows earlier releases should note that Dominik Huber and Tatjana Peceric have deliberately dialled back the skin character in search of more finesse and a clearer sense of place. The must ferments with indigenous yeasts and the wine then rests six months on lees in tank before unfiltered bottling.
Drink over the next three or four years with grilled prawns, roast chicken or a vegetable paella. Serve at 10-12°C.
