Description
Teutonic Candied Mushroom Riesling is an off-dry, flor-aged Oregon Riesling built around umami.
The wine began in 2017, a year that brought plenty of clean botrytis, when Barnaby Tuttle decided to lean into the noble rot instead of fighting it: soaking whole clusters on skins for a few days to let the fungus develop, pressing to barrel, then allowing a layer of flor to form and bottling at low alcohol with some residual sugar. Chef David Chang's advocacy for MSG was the original inspiration, hence the umami framing. Fruit comes from Crow Valley vineyard in the southern Willamette Valley, about 35 kilometres west of Eugene: a four-hectare, south-facing site first planted in 1979, own-rooted, dry-grown and farmed organically by Denea and Jackie Farrar. Four days on skins in 2022.
Savoury, racy and mineral, with dried apricot, salted lemon, mushroom broth and a nutty flor character; the sweetness is there to balance, not to dominate. Serve at 10 degrees. Pair it with roast pork and apple, a mushroom broth or aged Gouda.
