The Eyrie Vineyards Pinot Noir 2021

The Eyrie Vineyards Pinot Noir is an estate blend drawn from five vineyards across the Dundee Hills.

Sisters, Outcrop, Roland Green, The Eyrie and Daphne all contribute, spanning 67 to 260 metres of elevation. Three things shift as you climb: the soils turn from sedimentary to volcanic, the temperature drops, and the wind picks up, so the wine reads as a portrait of the Dundee Hills AVA seen through a delicate, perfumed lens. All five sites are farmed organically with no-till, and no insecticides, herbicides, fertilisers, cover crops or composts have been used since David Lett established the place in 1965, which has left some of the state's healthiest soils. The 2021 season was warm with long dry spells, cooled off in September and October, and chilly nights kept the acid intact. Fermented naturally, hand-plunged twice daily, 15 months in mostly old oak.

Perfumed and delicate, with red cherry, cranberry, rose and a savoury earthiness, the tannin fine and the acid clean. Serve at 14 to 15 degrees. It suits roast duck, salmon, or mushrooms on toast with thyme.
