The Hilt Old Guard Chardonnay 2015

The Hilt Old Guard Chardonnay is a tense, precise Californian Chardonnay made without malolactic fermentation or new oak.

The Hilt farms windswept vineyards on the western edge of the Sta. Rita Hills in Santa Barbara County, where cold Pacific air funnels through an east-west valley and creates some of California's coolest growing conditions. That climate shows in this Chardonnay, drawn from estate sites that reach full ripeness without losing their electricity. It's made without malolactic fermentation and with no new oak, keeping pear, green apple, chamomile and jicama sharp and saline. The 2015 has had time in bottle and is more open and expressive, yet still laser-like and full of mouthwatering acidity.

Serve at around 10 to 12 degrees. It's a great match for oysters, grilled white fish or crab with lemon and herbs.
