The Hilt Santa Barbara Chardonnay 2018

The Hilt Santa Barbara Chardonnay is a pure, tightly wound Chardonnay from California's cool Santa Barbara County.

Santa Barbara County's east-west valleys channel ocean breezes and fog far inland, making it one of the coolest wine landscapes on the Californian coast, and The Hilt has built its reputation on this edge-of-ripeness fruit. The 2018 season brought long, even sunshine, and the wine reflects it with white peach, lemon zest, white flowers and loquat, plus hints of white truffle, lavender and fresh herbed chevre. With air it adds croissant, almond flour and kumquat. Pure, compact and driving, it finishes with the estate's hallmark sea-salt freshness and a touch of structure.

Give it a little air, or a quick decant, and serve lightly chilled. It's excellent with roast chicken, lobster rolls or a soft goat's cheese.
