Thelema Cabernet Sauvignon 2021

Thelema Cabernet Sauvignon is a structured, firmly built Stellenbosch red from one of the Cape's most respected family estates.

The estate sits high on the Helshoogte Pass on the slopes of the Simonsberg, above the town of Stellenbosch, where the Webb family took over an old fruit farm in the early 1980s and replanted it to vines. Gyles Webb's Cabernet Sauvignon soon became a benchmark for the Cape, and the family still runs the estate today. Elevation brings cooler nights and slower ripening, which keeps freshness in a variety that can easily turn heavy in a warm climate. Expect blackcurrant leaf, coffee bean and leather over dark chocolate and blackberry, framed by firm, gripping tannin and a long finish.

Serve at around 16 to 18 degrees and give it an hour in a decanter while young. It is a natural match for a rib-eye off the barbecue, slow-roasted lamb shoulder or a hard aged cheese, and it will reward several years in a good cellar.
