Description
Thelema Sauvignon Blanc is a crisp, dry white from one of Stellenbosch's best-known family estates on the slopes of the Simonsberg.
Gyles Webb left an accounting career in Durban to make wine and bought the Thelema farm in 1983 with the help of his wife's family, the McLeans. The first wines were released in 1988 and the estate remains family owned and run. The vineyards lie high on the south-eastern side of the Simonsberg, among the highest in Stellenbosch, on red soils of decomposed granite, and the Sauvignon Blanc blocks were planted between 1985 and 2007. The grapes are destemmed and chilled straight away, the juice is fermented cool in tank, and the wine then stays on its lees for six months before bottling, which adds texture to a naturally zesty style.
Serve well chilled as an aperitif or with fresh salads, shellfish, grilled chicken, goat's cheese or simply cooked seafood. Bottled under screw cap, it is at its best young, within two or three years of vintage.
